Fully Loaded Stuffed Nachos

It’s dinner time and you can’t think what to make to impress your family. You can’t do another roast chicken and you definitely can’t have too many vegetables showing on the plate or your kids will have more to complain about while you are trying to strike up easy conversation around the dinner table. I have the easiest recipe that will make you turn the latin music up and have you dancing salsa moves while you top off this creation with a jar of your favourite salsa. Its time to spice things up!

Ingredients

  • Corn tortilla
  • 2 Tbsp vegetable oils
  • 500g beef mince
  • Salt and freshly ground black pepper
  • 1/2 can chopped tomatoes
  • 2 Tbsp dried mixed herbs
  • 1 Tbsp chilli flakes
  • 1/2 can rinsed black beans
  • 1 cup mozzarella, grated
  • 1 cup cheddar cheese, grated
  • Guacamole for serving
  • Salsa for serving
  • Fresh coriander

Directions

  1. Cut each of the tortillas into quarters and set aside
  2. In a medium pan, fry the mince and season until cooked
  3. Add the tomatoes, spices and beans to the mince and set aside to cool
  4. Place one-quarter of the tortilla on a prepared board and spoon the mince mixture onto a quarter of it and fold it in half
  5. Place the filled nacho chips onto a lined baking tray and place into the oven for 30 minutes or until crispy
  6. Remove from the oven and set aside to cool slightly
  7. Place all the nachos into a tower on an oven proof plate and top with grated cheese
  8. Place under the grill until the cheese has melted
  9. Serve with guacamole, salsa and fresh coriander
